For years, margarine was marketed as the healthier alternative to butter. Then the science caught up. Let’s look at what actually happened — without internet myths and without fear tactics.


Where Margarine Came From

Margarine was originally developed in the 1800s as a low-cost butter substitute. Over time, manufacturing methods shifted toward using partially hydrogenated vegetable oils. That process created industrial trans fats — and that’s where the real concern began. The issue was never “yellow coloring.” The issue was trans fat chemistry.

Butter vs. Traditional Margarine (Pre-2015 Reformulations)

Both contain similar calories per serving. The bigger differences historically came down to fat type and processing.

  • Butter: Higher in saturated fat; naturally occurring dairy fat; contains small amounts of fat-soluble vitamins.
  • Traditional margarine (older formulations): Often contained partially hydrogenated oils; contained trans fats; was associated with unfavorable lipid changes.

Because of this evidence, the FDA determined that partially hydrogenated oils are not Generally Recognized as Safe (GRAS) and removed them from the U.S. food supply. This decision changed margarine formulations nationwide. Modern soft margarine products today are generally trans-fat-free.
