Coconut Oil Research:

While some people falsely accuse coconut oil of being a “fad,” the fact is that it is a traditional oil that has been consumed for thousands of years in tropical cultures, and the research on the health benefits of coconut oil has existed for a very long time. Lauric acid, for example, has a long history of use in combating pathogens, and this research has been around for more than 50 years. Coconut oil is nature’s richest source of lauric acid. So while we do publish a lot of people’s experiences with coconut oil, the evidence is not strictly anecdotal. Coconut oil was once prevalent in western countries like the United States. With a long shelf life and a melting point of 76 degrees, coconut oil was a favorite in the baking industry. But a negative campaign against saturated fats in general, and coconut oil, in particular, led to most food manufacturers abandoning coconut oil in recent years in favor of hydrogenated polyunsaturated oils that come from the main cash crops in the US, particularly soy. These hydrogenated oils contain trans fatty acids. The polyunsaturated oils were not a big part of the diet of previous generations, so how has the health of Americans changed now that polyunsaturated oils are for the most part all one finds on supermarket shelves across the US?


Benefits of Coconut Oil

Diabetes

This is one fat that diabetics can eat without fear. Not only does it not contribute to diabetes, but it helps regulate blood sugar, thus lessening the effects of the disease. Island people have consumed large amounts of coconut oil for many generations without ever encountering diabetes, but when they abandoned it for other foods and oils, the results were disastrous.*

Weight Loss

The connection between coconut oil and weight loss is interesting. Farmers in America discovered this early last century when they tried to fatten their cattle by feeding them coconut oil. Coconut Oil: A Good Saturated Fat?

You may ask, isn't coconut oil a saturated fat? And aren't saturated fats harmful? Yes, coconut oil consists of 90% saturated fats. But whether or not saturated fats are harmful depends on who you ask. Among mainstream nutritionists, the idea that saturated fats cause heart disease is an “absolute truth” that is never questioned. Those who question this belief, however, point out that mankind has been consuming mainly saturated fats – in the form of butter, lard, coconut oil, etc – for thousands of years, yet heart disease was rare before the 1920s. If anything, the rise of heart disease in recent decades may correspond to the increasing use of polyunsaturated vegetable oils like corn, safflower, and canola, as well as margarine.*

What makes coconut oil different?

Oils and fats are composed of molecules known as fatty acids. They are classified either according to saturation or based on molecular length and size of the carbon chain within each fatty acid. Monounsaturated fats and polyunsaturated fats are an example of the first class.

The second classification is based on the molecular size or length of the fatty acid's carbon chain. Long chains of carbon atoms consist of each fatty acid with an attached hydrogen atom. There are short-chain fatty acids known as SCFA, medium-chain fatty acids (MCFA) such as coconut oil, and long-chain fatty acids (LCFA). Whether unsaturated or saturated, the majority of fats and oils in our diet are composed of long-chain fatty acids. In fact, a majority of the fatty acids commonly consumed are LCFA.

Coconut oil is a predominantly medium-chain fatty acid (MCFA) and the effects of the MCFA in coconut oil are distinctly different from the LCFA found in other foods. In fact, the saturated and unsaturated fat in milk, eggs, meat, and even in plants and most vegetable oils are made of LCFA. Why is this relevant? It is important because our bodies respond and metabolize each fatty acid differently. It is the MCFA found in coconut oil that makes it special because these fatty acids do not have a negative effect on cholesterol. In fact, they are known to lower the risk of heart disease and atherosclerosis. There are only a few dietary sources of MCFA, and one of the best sources by far is coconut oil.

The liver and gall bladder do not need to digest and emulsify MCFA, resulting in instant energy, increased metabolic rate, and subsequently more heat production as well as increased circulation. Anyone with impaired fat digestion or removed gallbladder will benefit from coconut oil as this oil is easily digested.
